Citrus vinaigrette

With the citrus fruit of your choice


You will need :

  • 15cl grapefruit juice (or orange, lime, etc)
  • 2cl candied lemon and ginger vinegar
  • 1 teaspoon of mustard
  • 1cl olive oil
  • 1 pinch of Espelette pepper
  • Salt & Pepper

  1. In a saucepan, pour the grapefruit juice and reduce it to a syrupy consistency.
  2. Then add the olive oil, vinegar, chilli, salt and pepper.
  3. Mix well and store in the fridge.
Tip: This recipe can also be created with vanilla and combava vinegar or apricot and saffron balsamic.
