Citrus vinaigrette
With the citrus fruit of your choice
You will need :
- 15cl grapefruit juice (or orange, lime, etc)
- 2cl candied lemon and ginger vinegar
- 1 teaspoon of mustard
- 1cl olive oil
- 1 pinch of Espelette pepper
- Salt & Pepper
- In a saucepan, pour the grapefruit juice and reduce it to a syrupy consistency.
- Then add the olive oil, vinegar, chilli, salt and pepper.
- Mix well and store in the fridge.
Tip: This recipe can also be created with vanilla and combava vinegar or apricot and saffron balsamic.
