Bluefin tuna

An exotic delight


You will need: (for 2 people)

  • 300g of red tuna steak
  • Juice of half a lemon
  • 8 tablespoons of combava and Madagascar vanilla vinegar
  • 5 tablespoons of olive oil
  • Fresh basil
  • Sesame seeds
  • 2 teaspoons of white sugar
  • Salt & Pepper

  1. Cut the tuna into large cubes and place them in a shallow dish.
  2. Pour in the lemon juice, olive oil and combava and Madagascar vanilla vinegar. Season with salt and pepper.
  3. Mix well and pour the marinade over the fish. Cover with cling film and leave in the fridge for 2 hours.
  4. Then fry the fish in a non-stick pan without the marinade on a high heat for 4 minutes.
  5. Add the marinade and sugar and leave on a high heat for another 2 minutes, stirring constantly.
  6. Remove from heat. Wash the basil, chop it finely and add to the fish. Sprinkle with sesame seeds.
  7. Serve with diced fresh mango.
Tip: This recipe can also be created with Mango Ginger Vinegar or Nepalese Pepper Vinegar.
