Bluefin tuna
An exotic delight
You will need: (for 2 people)
- 300g of red tuna steak
- Juice of half a lemon
- 8 tablespoons of combava and Madagascar vanilla vinegar
- 5 tablespoons of olive oil
- Fresh basil
- Sesame seeds
- 2 teaspoons of white sugar
- Salt & Pepper
- Cut the tuna into large cubes and place them in a shallow dish.
- Pour in the lemon juice, olive oil and combava and Madagascar vanilla vinegar. Season with salt and pepper.
- Mix well and pour the marinade over the fish. Cover with cling film and leave in the fridge for 2 hours.
- Then fry the fish in a non-stick pan without the marinade on a high heat for 4 minutes.
- Add the marinade and sugar and leave on a high heat for another 2 minutes, stirring constantly.
- Remove from heat. Wash the basil, chop it finely and add to the fish. Sprinkle with sesame seeds.
- Serve with diced fresh mango.
