Salmon glazed with balsamic
A pure delight
You will need: (for 4 people)
- 4 salmon fillets (about 180g each)
- 5 tablespoons of blackcurrant and juniper balsamic
- 3 tablespoons of maple syrup (or, failing that, honey)
- 50g of parmesan shavings
- A few sprigs of fresh chives
- 15g butter
- 1 tablespoon of olive oil
- Salt & Pepper
- Heat the butter and oil in a frying pan over medium heat.
- Cook the salmon fillets for 5 minutes on each side.
- Pour the maple syrup and balsamic into the pan. Continue cooking for 1 minute on each side, basting the salmon fillets well.
- Divide the mixture between plates and add the chopped chives and parmesan shavings.
