Smoked duck breast sandwich

For a meal on the go


You will need: (for 1 person)

  • 1 half baguette of corn bread (or two nice slices of farmhouse bread)
  • 1 tomato
  • 5 slices of smoked duck breast
  • 2 soft dried apricots
  • A few leaves of rocket
  • 1 teaspoon of mayonnaise
  • 2 tablespoons of blackcurrant and timut balsamic
  • Salt & Pepper

  1. In a small saucepan, reduce the blackcurrant and timut balsamic for a few minutes over medium heat, so that it becomes thicker.
  2. Cut the dried apricots and the tomato into strips.
  3. Cut the bread in half and spread the mayonnaise on each side.
  4. Add the tomato slices, the salad, the smoked duck breast, the dried apricot slices and drizzle with the blackcurrant and timut balsamic reduction.
Tip: This recipe can also be created with plain balsamic or Espelette pepper vinegar.
