Indian veggie salad

A classic


You need: (for 2 people)

  • 50g coral lentils
  • 100g raw rice
  • 100g of tomatoes
  • 2 hard-boiled eggs
  • Apricot and saffron balsamic
  • Olive oil
  • Salt & Pepper

  1. Dice the tomatoes.
  2. Cook the lentils in a pan of boiling salted water for about 15 minutes.
  3. Cook the rice as indicated on the packet.
  4. Mix the tomatoes, rice and lentils in a bowl. Season with olive oil and apricot and saffron balsamic.
  5. Garnish with slices of hard-boiled egg.
Tip: This recipe can also be created with orange wine vinegar and kina-karo balsamic.
