Mesclun and smoked salmon salad
Full of freshness
You will need: (for 4 people)
- 1 packet of mesclun
- 120g smoked salmon
- 12 cherry tomatoes
- 1 shallot
- Zest of half a lemon
- 2 tablespoons of olive oil with fennel
- 1 tablespoon of plain 10 year old balsamic
- Salt & Pepper
- Rinse and dry the mesclun.
- Mix the oil and balsamic in a bowl and add the lemon zest.
- Cut the tomatoes in half and slice the smoked salmon into thin strips.
- Mix the mesclun, tomatoes and smoked salmon in a salad bowl.
- Season with the sauce, salt and pepper.
Tip: This recipe can also be created with basil olive oil or Lucca olive oil.
