Gizzard salad

A very French recipe


You will need: (for 2 people)

  • 3 large handfuls of rocket
  • 220g of duck gizzards
  • 70g of corn
  • 2 tomatoes
  • A small handful of pine nuts
  • Balsamic with breast, smoked with rosemary and hibiscus
  • Olive oil
  • Salt & Pepper

  1. Fry the gizzards to melt the fat and warm them up.
  2. Meanwhile, in a salad bowl, mix the corn, rocket, sliced tomatoes and pine nuts.
  3. Drizzle with olive oil and balsamic with chestnut, smoked rosemary and hibiscus.
  4. Mix well.
  5. Drain the gizzards and add them to the bowl. Mix again and serve.
Tip: This recipe can also be created with amphora-aged and smoked balsamic or orange wine vinegar.
