Gizzard salad
A very French recipe
You will need: (for 2 people)
- 3 large handfuls of rocket
- 220g of duck gizzards
- 70g of corn
- 2 tomatoes
- A small handful of pine nuts
- Balsamic with breast, smoked with rosemary and hibiscus
- Olive oil
- Salt & Pepper
- Fry the gizzards to melt the fat and warm them up.
- Meanwhile, in a salad bowl, mix the corn, rocket, sliced tomatoes and pine nuts.
- Drizzle with olive oil and balsamic with chestnut, smoked rosemary and hibiscus.
- Mix well.
- Drain the gizzards and add them to the bowl. Mix again and serve.
