Piece of beef
A good winter meal
You need: (for 2 people)
- 450g of beef mitre
- 3 shallots
- 15cl of brown stock
- 5cl of Espelette pepper vinegar
- A knob of butter
- Salt & Pepper
- Peel and finely chop the shallots.
- In a saucepan, melt the butter over a low heat, then add the shallots. Cover the pan and leave to cook and reduce for 7 minutes.
- Deglaze with the Espelette pepper vinegar and continue cooking for 5 minutes.
- Add the brown stock and reduce for another ten minutes. Do not forget to season.
- In the meantime, cook the pieces of beef, already salted and peppered, in very hot oil until they are cooked to the desired degree.
- Serve the sauce over the meat and accompany the dish with pommes dauphines or mashed sweet potatoes.
- You can also make this dish with any type of red meat.
Tip: This recipe can also be created with raspberry balsamic or honey vinegar.
