Spring onions

Italian antipasti


You need :

  • 200g of baby onions
  • 9cl of 10 year old plain balsamic
  • 5cl water
  • 1 tablespoon brown sugar
  • 3cl olive oil
  • Salt & Pepper

  1. Peel and wash the onions. Pour the olive oil, balsamic, water and sugar into a saucepan and bring to the boil.
  2. Add the onions and season with salt and pepper.
  3. When the pan starts to boil again, cover and lower the heat. Simmer for about an hour.
  4. Allow to cool to room temperature, then chill for at least 1 hour.
  5. Serve chilled.
Tip: Try this starter with smoked blackberry balsamic or Espelette pepper vinegar.
