Spring onions
Italian antipasti
You need :
- 200g of baby onions
- 9cl of 10 year old plain balsamic
- 5cl water
- 1 tablespoon brown sugar
- 3cl olive oil
- Salt & Pepper
- Peel and wash the onions. Pour the olive oil, balsamic, water and sugar into a saucepan and bring to the boil.
- Add the onions and season with salt and pepper.
- When the pan starts to boil again, cover and lower the heat. Simmer for about an hour.
- Allow to cool to room temperature, then chill for at least 1 hour.
- Serve chilled.
Tip: Try this starter with smoked blackberry balsamic or Espelette pepper vinegar.
