Haricots coco

An original salad


You will need: (for 4 people)

  • 350g coconut beans
  • 1 white onion
  • 1 red onion
  • 5cl of spiced vinegar
  • 80g feta cheese
  • 30g walnuts
  • 100g cherry tomatoes
  • 3 tablespoons of olive oil
  • Salt & Pepper

  1. Peel and chop the white onion. In a saucepan, fry it for a few minutes in a little oil.
  2. Add the beans and water and cook in boiling water with salt and pepper for 25 minutes. Drain and set aside.
  3. Cut the cherry tomatoes into quarters, finely chop the red onion and crush the walnuts.
  4. Mix the tomatoes, beans and red onion in a bowl. Season with salt and pepper. Add the feta cheese and walnuts.
  5. Add the oil and vinegar to the spices and mix again.
Tip: This recipe can also be created with garrigue vinegar or blackcurrant and juniper balsamic.
