Guacamole
As a starter or aperitif
You will need :
- 2 ripe avocados
- 1 lime
- 4 tablespoons ofolive oil
- 4 teaspoons 15 year old vinegar
- 1 spring onion
- Salt & Pepper
- Coarsely crush the avocados. Finely chop the onion.
- In a food processor (or with a fork for a thicker texture), mix the avocado puree, lime juice, onion, olive oil, 15 year old vinegar, salt and pepper.
- Set aside in the fridge before serving with chips or on toasted bread slices.
Tip: This recipe can also be created with Espelette pepper vinegar, or spice vinegar.
