Wild boar fillets with red fruits
Gourmand
You need: (for 4 people)
- 4 wild boar fillets
- 6cl raspberry balsamic
- 6cl of brown stock
- 15g caster sugar
- A soft oil
- Some fresh red fruits
- Salt & Pepper
- In a hot pan with a drizzle of oil, brown the wild boar fillets over a high heat for 2 minutes on each side. When they are well coloured, set them aside and cover them with a sheet of aluminium foil.
- Deglaze the pan with the raspberry balsamic and bring to the boil.
- Then add the brown stock, red fruit and sugar.
- Cook at a low boil until the sauce thickens. Add the cold butter cut into pieces.
- Add salt and pepper to taste.
- Return the wild boar fillets to the sauce and heat them up over medium heat for 5 minutes.
- Accompany this dish with hazelnut apples, and especially a good red wine.
Tip: Try this dish also with Strawberry Timut Balsamic or Honey Vinegar.
