Pork Fillets

For a family meal


You will need: (for 4 people)

  • 4 pork fillets (about 350g per person)
  • 5 tablespoons of wholegrain mustard
  • 8 tablespoons honey vinegar
  • 2 tablespoons of olive oil
  • 2 cloves of garlic
  • Coarse salt
  • Pepper

  1. Mix the mustard, olive oil, pepper and honey vinegar in a deep dish.
  2. Finely chop the garlic and add it to the mixture.
  3. Dip the pork fillets in the marinade and coat them well, turning them several times.
  4. If you can, leave to marinate in the fridge (24 hours maximum).
  5. On an oiled grill, place the pork tenderloins on the barbecue and, with a pastry brush, add the remaining marinade to the meat.
  6. Cook for about 15 minutes (depending on your barbecue). The fillets should be golden on the outside and still pink on the inside.
  7. Add a few pinches of coarse salt.
  8. Wrap the fillets in aluminium foil for 5 minutes to let them rest, then cut them into slices about 1cm thick.
  9. Serve with crispy potatoes or homemade ratatouille.
Tip: This recipe can also be created with Espelette pepper vinegar, or red fruit balsamics (raspberry, blackberry or black currant and juniper).
