Deglazing of prawns
As a starter or main course
You will need: (for 4 people)
- 20 large prawns
- 30g of butter
- 7cl of mango and ginger vinegar
- 2 shallots
- Salt & Pepper
- Rinse the prawns in cold water, drain them and then carefully peel them.
- Finely chop the shallot.
- Place the butter in a hot frying pan and add the shallots.
- Leave to cook for a few minutes and add the prawns.
- Halfway through cooking, add the mango and ginger vinegar and mix.
- Continue cooking, lowering the heat a little.
- Add salt and pepper and serve directly with the juice from the pan.
