Freshness as a starter


You will need: (for 6 people)

  • 1 small tomato
  • 4 stems of chives
  • 1 ripe avocado
  • Half a lemon
  • 125g of mascarpone
  • 10 year old natural balsamic pearls
  • Salt & Pepper

  1. Cut the avocado in half, remove the flesh and sprinkle with a little lemon juice.
  2. Blend the flesh with the mascarpone. Add the remaining lemon juice, salt and pepper and mix well.
  3. Wash and seed the tomato. Cut it into half centimetre cubes. Season with salt.
  4. Place the avocado cream on the spoons, spread a few diced tomatoes and 3 pearls.
  5. Sprinkle with chives and serve chilled.
