Courgette crumble

As an accompaniment to a good meat


You will need: (for 4 people)

  • 3 small courgettes
  • Olive oil
  • Balsamic walnut and curry
  • 2 shallots
  • 55g butter
  • 90g parmesan cheese
  • 65g flour
  • 25g breadcrumbs
  • Salt & Pepper

  1. Preheat the oven to 180°C.
  2. Wash, peel and cut the courgettes into thin slices. Chop the shallots.
  3. Then fry them in a pan with a tablespoon of olive oil and 3 tablespoons of walnut and curry balsamic.
  4. Season with salt and pepper. Leave to cook for about 10 minutes.
  5. Prepare the crumble mixture: mix the flour, breadcrumbs, parmesan and butter until you have a thick sand.
  6. Arrange the courgettes and shallots in a buttered pie dish, crumble the crumble mixture over them, and bake for 25 minutes.
Tip: This recipe can also be created with mango ginger vinegar and candied fig balsamic.
