A scent of summer


You will need: (for 4 people)

  • 1kg of knives
  • 10cl of white wine
  • 5cl olive oil
  • 2 cloves of garlic
  • 1 shallot
  • 8cl Nepalese pepper vinegar
  • Salt & Pepper

  1. Keep the knives in bunches. Plunge them into cold, salted water (30g per litre) for 2 hours to drain.
  2. Change the water and immerse them again for a good hour in unsalted water.
  3. In a hot frying pan, pour a little water and throw the knives in for less than a minute, until they open up, then drain.
  4. Peelthe garlic and shallot and chop finely.
  5. In a hot frying pan, fry them in the oil for a few minutes.
  6. Add the cut and gutted knives.
  7. Fry for 4 minutes.
  8. Deglaze with white wine and Nepalese pepper vinegar.
  9. Enjoy immediately!
Tip: This recipe can also be created with combava and Madagascar vanilla vinegar or thyme vinegar.
