Mirabelle plum jam
For breakfast
You will need :
- 1.2kg ripe mirabelle plums
- 1kg of granulated sugar
- 1 half lemon
- 1 cinnamon stick
- 8cl of apricot balsamic
- Rinse the mirabelles, dry them, cut them in half and remove the stones.
- In a saucepan, mix the fruit, sugar, cinnamon stick, lemon juice and 20cl water. Bring to the boil.
- Keep the mixture at a low boil for 20 minutes, skimming from time to time.
- To see if it is cooked, put a few drops of jam on a cold plate and tilt the plate. The jam should run down gently.
- Finally add the apricot balsamic and mix. Then fill your jam jars (and sterilise as you like).
