Prune Chutney
An Indian condiment
You will need :
- 500g of prunes
- 3 tablespoons cane sugar
- 3cl of balsamic with Tonka bean
- Salt & Pepper
- Remove the stones from the prunes and fry them in a pan without fat for about 4 minutes.
- Then blend them in a blender to obtain a coarse purée.
- Put them back into the pan and let them stew for 5 minutes.
- Add a little water, the sugar and mix. Leave to cook for 15 minutes on a low heat and then add the balsamic.
- Let the mixture thicken slowly and remove the pan from the heat.
- Serve cold with a lamb curry for example, or use the chutney as a condiment.
Tip: This recipe can also be created with pink, lemon and ginger vinegar or blackcurrant and juniper balsamic.
