Carpaccio figs and parmesan
A daring entry!
You will need: (for 4 people)
- 12 figs
- Whole parmesan cheese
- 60g of rocket
- 40g of pine nuts
- 6cl olive oil
- 7cl of pink lemon and ginger vinegar
- Salt & Pepper
- In a hot frying pan, roast the pine nuts without fat for 2 minutes on medium heat.
- In a bowl, mix the oil, vinegar and roasted pine nuts and season with salt and pepper. Set aside.
- Peel the figs, cut them into thin slices and arrange them on the bottom of a serving dish.
- On top of this, place shavings of parmesan cheese, garnish with a little rocket and drizzle with the vinaigrette.
Tip: This recipe can also be created with caramel vinegar or raspberry balsamic.
