Carpaccio figs and parmesan

A daring entry!


You will need: (for 4 people)

  • 12 figs
  • Whole parmesan cheese
  • 60g of rocket
  • 40g of pine nuts
  • 6cl olive oil
  • 7cl of pink lemon and ginger vinegar
  • Salt & Pepper

  1. In a hot frying pan, roast the pine nuts without fat for 2 minutes on medium heat.
  2. In a bowl, mix the oil, vinegar and roasted pine nuts and season with salt and pepper. Set aside.
  3. Peel the figs, cut them into thin slices and arrange them on the bottom of a serving dish.
  4. On top of this, place shavings of parmesan cheese, garnish with a little rocket and drizzle with the vinaigrette.
Tip: This recipe can also be created with caramel vinegar or raspberry balsamic.
