Carpaccio of tomatoes

On the mandolin


You need: (for 2 people)

  • 1 pineapple tomato (or other yellow tomato variety)
  • 1 red tomato (Marmande for example)
  • 1 shallot
  • 1 small red onion
  • Pink vinegar, lemon and ginger
  • Salt & Pepper

  1. With a mandolin, cut the tomatoes into thin strips. Do the same with the onion and shallot.
  2. In a bowl, place the yellow tomato slices on the outside, folding them in half.
  3. Then do the same with the red tomatoes, spreading a few slices of red onion and shallot.
  4. Finish by spraying a little pink vinegar, lemon and ginger, add salt and pepper and serve.
Tip: This recipe can also be created with Espelette pepper vinegar or apricot balsamic.
