Avocado and goat

A sweet / savoury starter


You will need: (for 4 people)

  • 2 avocados
  • 1 handful of rocket (or lettuce if not available)
  • 50g unsalted shelled pistachios
  • 2 goat’s cheese crumbs
  • A few fresh strawberries for decoration
  • Olive oil
  • Strawberry and timut balsamic
  • Salt & Pepper

  1. Brown the pistachios in a non-stick pan for 3 minutes. Let them cool and crush them.
  2. Peel the avocados and cut them into strips. Do the same with the goat’s cheese.
  3. Rinse and spin dry the rocket.
  4. Mix the strawberry and timut balsamic with the olive oil, salt and pepper.
  5. Place the avocado and goat cheese slices on the rocket in a plate. Pour the vinaigrette on top, then add the crushed pistachios.
  6. Finish by cutting a few strawberries into quarters and add them to the top. Enjoy chilled.
Tip: This recipe can also be created with Walnut and Curry Balsamic or Pink, Lemon and Ginger Vinegar.
